Lentil Loaf with yogurt sauce & baby spinach salad.
Lentils, a small but nutritionally mighty member of the legume family, are a very good source of cholesterol-lowering fiber. Not only do lentils help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal. But this is far from all lentils have to offer. Lentils also provide good to excellent amounts of six important minerals, two B-vitamins, and protein—all with virtually no fat.

Mushrooms are low in kilojoules and are very filling, making them a great healthy ingredient to add into your cooking. They are a wonderful source of fibre and provide us with one of the highest antioxidant foods in the world. They deliver more than a quarter of your daily needs of essential vitamins including: riboflavin, niacin, pantothenic acid and biotin!
Riboflavin also known as Vitamin B2, is one of 8 B vitamins. All B vitamins help the body to convert food (carbohydrates) into fuel (glucose), which is “burned” to produce energy. These B vitamins, often referred to as B complex vitamins, also help the body metabolize fats and protein. B complex vitamins are necessary for healthy skin, hair, eyes, and liver. They also help the nervous system function properly.
All the B vitamins are water-soluble, meaning that the body does not store them.
